Mais saviez-vous qu\u2019il existe <strong>plusieurs vari\u00e9t\u00e9s de p\u00eaches<\/strong>, chacune avec ses particularit\u00e9s ? De la p\u00eache plate \u00e0 la p\u00eache de vigne, d\u00e9couvrons ensemble ce fruit sous toutes ses formes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83c\udf33 Un peu de botanique pour commencer<\/h2>\n\n\n\n<p>La p\u00eache est le fruit du <strong>p\u00eacher<\/strong> (<em>Prunus persica<\/em>), un arbre originaire de Chine. Elle appartient \u00e0 la grande famille des rosac\u00e9es, tout comme l\u2019abricot, la cerise et la prune.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83c\udf51 Les grandes cat\u00e9gories de p\u00eaches<\/h2>\n\n\n\n<p>On distingue principalement <strong>trois grandes familles de p\u00eaches<\/strong>, selon la texture de leur peau et la forme du fruit.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">1. <strong>La p\u00eache \u00e0 peau duveteuse<\/strong><\/h3>\n\n\n\n<p>C\u2019est la p\u00eache &#8220;classique&#8221;, avec une peau l\u00e9g\u00e8rement velout\u00e9e, parfois plus \u00e9paisse. Sa chair peut \u00eatre <strong>blanche ou jaune<\/strong>, et son go\u00fbt varie du tr\u00e8s sucr\u00e9 au l\u00e9g\u00e8rement acidul\u00e9.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>P\u00eache blanche<\/strong> : tr\u00e8s juteuse, sucr\u00e9e et parfum\u00e9e. Fragile, elle supporte mal le transport.<\/li>\n\n\n\n<li><strong>P\u00eache jaune<\/strong> : plus ferme, au go\u00fbt souvent plus acidul\u00e9. Id\u00e9ale pour les tartes ou les compotes.<\/li>\n<\/ul>\n\n\n\n<p>\ud83d\udca1 <em>Astuce<\/em> : Pour retirer facilement la peau, plongez-la quelques secondes dans de l\u2019eau bouillante puis dans de l\u2019eau glac\u00e9e.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">2. <strong>La p\u00eache \u00e0 peau lisse (nectarine)<\/strong><\/h3>\n\n\n\n<p>La nectarine est souvent consid\u00e9r\u00e9e comme une sous-cat\u00e9gorie de p\u00eache, mais elle est g\u00e9n\u00e9tiquement tr\u00e8s proche. La diff\u00e9rence principale : sa <strong>peau lisse<\/strong>, fine et brillante.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nectarine blanche ou jaune<\/strong> : m\u00eame distinctions que pour la p\u00eache velout\u00e9e.<\/li>\n\n\n\n<li>Elle est souvent plus ferme, ce qui en fait une bonne candidate pour les salades de fruits ou les pique-niques.<\/li>\n<\/ul>\n\n\n\n<p>\ud83e\udd44 <em>Bon \u00e0 savoir<\/em> : La nectarine n\u2019est pas un croisement entre la p\u00eache et une autre esp\u00e8ce, c\u2019est une mutation naturelle de la p\u00eache.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">3. <strong>La p\u00eache plate (ou p\u00eache \u00ab&nbsp;donut&nbsp;\u00bb)<\/strong><\/h3>\n\n\n\n<p>Appel\u00e9e aussi <strong>p\u00eache de Chine<\/strong> ou <strong>p\u00eache Saturne<\/strong>, cette vari\u00e9t\u00e9 a une forme aplatie, originale et ludique. Elle a la peau l\u00e9g\u00e8rement duveteuse et une <strong>chair blanche<\/strong>, tr\u00e8s sucr\u00e9e, peu acide et tr\u00e8s parfum\u00e9e.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Tr\u00e8s appr\u00e9ci\u00e9e des enfants pour sa forme et sa douceur.<\/li>\n\n\n\n<li>Parfaite \u00e0 manger crue, mais fragile \u00e0 la manipulation.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83c\udf77 Et la p\u00eache de vigne ?<\/h2>\n\n\n\n<p>La <strong>p\u00eache de vigne<\/strong> est une vari\u00e9t\u00e9 ancienne \u00e0 peau grise, parfois rouge\u00e2tre, et \u00e0 chair tr\u00e8s parfum\u00e9e, souvent <strong>rouge fonc\u00e9<\/strong>.
